Manolo Caracol takes his guests on a true culinary odyssey, based on ultra-fresh market products.
Every day, the Spanish chef Manuel Madueño puts together set menus according to his inspiration. The meal consists of five dishes at lunch, and 10 or 12 at night, usually centred on seafood. All you have to do is choose the wine to accompany your tasting menu. This renowned chef, originally from Andalusia in Spain, works inventively with the best products in the region. Roasted lobster, sole carpaccio, shrimp with ginger, beef tongue with sea salt, all prepared in the open kitchen in a dining room of elegant wooden tables illuminated by candles.
On the walls are contemporary paintings, giving you the fleeting impression that you are in an art gallery.
An excellent restaurant, it is essential that you book well in advance, especially for a weekend dinner. They have also opened another address, Manolo Caracol of La Huerta, in the countryside of Pedasí.
